Tasting Notes: Tasting notes taken 19 January 2012, 31 days after kegging. I've let this lager 1 month. Appearance: rich, dark golden color; the body is almost completely free of haze. Head pured a good finger of creamy ivory foam and seems to have decent retention and lacing. The beer is nicely effervescent; overall, I think it is damn fine. I think a hair more clarity would make this almost perfect. (4) Smell: aroma is mild and quite grainy with just a touch of earthy hops. I like it well enough, though I feel it could be a tad sweeter and less grainy. Still, it is very close to style for a dry Pilsner. (3.5) Taste: grainy with a hint of sweetness. Hops are earthy on the tongue and moderately bitter toward the end. This is a smooth, clean beer; I'm digging it. Maybe a bit grainy for my taste, but this thing is very to-style. (4) Mouthfeel: medium-light body with a good level of carbonation and a very nice creaminess. Pretty damn good. (4) Drinkability: this thing is definitely a Pilsner when it comes to drinkability. The lagering really has helped it develop; having it at 5 days versus 31 makes a huge difference. I'm sure it's only going to get better. That said, this is probably the single most quaffable beer I've ever made, especially at the 6.3% ABV level. Mmmmmm. (5) Overall score 4.0 (B+). This is owing to the giant drinkability grade I awarded it.
